Wake up to Bacon Egg Salad on a toasty English Muffin with this quick and easy recipe!
If it was up to my daughter she would eat bacon for breakfast, lunch, dinner, and even dessert. Lately, we’ve been on a hard boiled egg kick so we’ve been making a bunch of different recipes with them since we always have them in the house.
One of my favorite ways to use hard boiled eggs is egg salad. Add bacon, EPIC. Bacon Egg Salad and yes you can eat this for breakfast. I like to put it on a freshly toasted English muffin. I may or may not put the English muffin open side down in the bacon greased pan and let it toast that way. Just saying.. I may do that.
What I love about this Bacon Egg Salad is how easy it is to make. I can make my kiddo her bacon and hard boiled eggs and make my husband and I the bacon egg salad! I find that 3 large eggs will make enough for two sandwiches. I like to use 2 pieces of bacon for every 3 eggs. So if you make 3 eggs, use 2 slices of bacon, if you make 6 eggs, use 4 slices.
For this recipe, I used Smithfield Hometown Original Bacon. It’s not overpowering and really compliments the eggs in the egg salad.
This is a great breakfast that really takes no time I wake up in the morning and place everything into the oven, make our morning coffee, start a load of laundry, and then head back to the oven to prep breakfast. The hardest part is the laundry, ha!
HOW TO MAKE HARD BOILED EGGS IN THE OVEN
- Preheat oven to 350 degrees F
- Using a muffin tin, place 1 egg in each muffin cup
- Bake for 30 minutes then plunge baked eggs in a large bowl filled with ice water until cooled completely, about 10 minutes
HOW TO MAKE CRISPY BACON IN THE OVEN
We always bake our bacon. I never use a microwave or frying pan. Simply arrange the bacon onto a baking pan (lined if you prefer easy cleanup) and make sure it’s not touching. Bake at 375 degrees for 17-20 minutes, until desired crispiness. Remove the bacon and drain on paper towel before serving or using.

Bacon Egg Salad
Bacon Egg Salad on an English Muffin – Quick and easy breakfast recipe!
- 2 slices bacon
- 3 eggs (hard boiled)
- 1 tablespoon green onions (chopped)
- 2 teaspoons mayo
- pepper to taste

In a large bowl mash up the hard boiled eggs.
Chop up the crispy bacon and place into the bowl with eggs.
Add remaining ingredients and serve on a toasted English muffin.
