Getting a toddler to eat their dinner can be a nightmare. Imagine having a picky toddler who had food allergies and rarely at anything other than what they wanted. That’s the story of my life. So when Kay devoured a bowl of quinoa chili I made it was eye opening. I must make this child chili and then and only then will she finish her dinner. She even tells you, “I’m going to eat it all, don’t touch!”. It’s such a simple chili recipe that we make it pretty often!
With the colder months, we love to enjoy a hot steamy meal, especially comfort food. I know everyone is doing the “New Year New Me”, but we’re not doing too bad so I’m doing “New Year Same Me”. This is an all organic meal and my family loves it! I made a huge batch and even brought some over to my in-law’s house, they also loved it!
This recipe seems like it has a ton of ingredients but really I had all of the chili ingredients in my house aside from the beef and short ribs. If you don’t like chili recipes with beef you can even make this a vegetarian chili by leaving out the meat and placing in quinoa and more beans or lentils.
The short ribs with the bone in really give this chili and deep meaty flavor to take this from a basic chili recipe to the best beef chili recipe! If you don’t want to put the short ribs in after cooking you don’t have to, the main thing is letting those bones cook with the chili to give it the flavor. You can just enjoy the short ribs right off the bone too! I sometimes like to add a 1/2 cup of red wine to this as well to really give it a deep, rich flavor.
What I really love about chili is you can really add anything you want. Sometimes Whole Foods has a ton of boneless short ribs and bone in and I’ll do just a short rib chili and it’s OUT OF THIS WORLD DELICIOUS!! Once the short ribs and meat are browned you could even throw everything into a slow cooker to make a slow cooker beef chili.
My favorite way to eat chili is a little sour cream, avocado, and crushed up tortilla chips. The only regret I have is not making a double batch so I could eat this while typing up the post. Instead, I’ll be making a big pot tomorrow, a double batch of course. I’ll also be freezing half – I tested it at it freezes beautifully!

Beef Chili Recipe

- 2 Lbs Ground Beef
- 1 lb Short Rib (bone in)
- 1 Tablespoon Olive Oil
- 1 Large Onion (diced)
- 5 Cloves Garlic (minced)
- 1/4 Cup Chili Powder
- 1 1/2 Tablespoons Cumin
- 2 Teaspoons Oregano
- 1 Teaspoon Pepper
- 1 Teaspoon Sea Salt
- 1/2 Cup Water
- Pinch of Cayenne Pepper (more if you like it spicy!)
- 2 28 oz Cans Diced Tomatoes
- 1 Cup Corn (frozen)
- 2 13.4 oz Package Kidney Beans
- 1 13.4 oz Package Black Beans
- 1 1/2 Cup Chopped Peppers Sliced or Chopped (Frozen)
- In a large pot brown the short ribs.
- In a separate pan sauté the olive oil onions and garlic with seasonings.
- Once the short ribs are browned remove and start to brown the ground beef.
- Add water to the ground beef to break it up and place in the short ribs.
- Add onions and garlic plus tomatoes, corn, beans and peppers to the pot.

Bring to a boil and then reduce heat and cook for an hour.

Shred the short ribs into the beef chili recipe or you can enjoy them off the bone.
