Chicken Mozzarella is an easy chicken breast recipe using Italian seasonings, freshly grated mozzarella, and juicy garden tomatoes.
I love making easy chicken breast recipes and this one is definitely easy! You can easily double or even triple this chicken mozzarella recipe for dinner parties. We typically make 3-4 chicken breasts at a time with this recipe. If you love caprese salad you’ll love this mozzarella chicken breast! This is definitely in our regular rotation along with our oven baked chicken breast, baked bbq chicken breast, chili lime chicken breast, oregano chicken breast, of course, chicken fajitas!
How can we use leftovers?
I love chopping it up the next day for a cold chicken mozzarella pasta salad. You can add more fresh tomatoes, the chicken, pasta, Italian seasonings, olive oil, and more shredded mozzarella.
Chicken Mozzarella Ingredients:
- 3-4 chicken breasts
- 1 large or 2 medium tomatoes, sliced
- 1 cup shredded mozzarella
- 1/4 teaspoon basil
- 1/4 teaspoon parsley
- 1/4 teaspoon thyme
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon olive oil
How to make Chicken Mozzarella
Preheat oven to 400 degrees F.
Place the chicken breasts onto a parchment lined baking sheet and cover with olive oil and seasonings.
Bake the chicken for 25-30 minutes, until a thermometer reaches 165 degrees F in the thickest part of the chicken breast.
Once the chicken breast is fully cooked add on some sliced tomatoes and shredded mozzarella. Sprinkle with a little more parsley if you want more green on top. (Want to make mozzarella stuffed chicken? Put the fillings inside instead of on top!)
Bake the chicken for another 5 minutes or until the cheese is fully melted.
