We love making foods that the whole family will enjoy and that we can easily make for others too! This cold chicken pasta salad is affordable to make and it’s filling too! My family loves giving back; we always do it whenever we get the chance. Our local Stop & Shop is doing the Feeding America Program again, and we always participate and stock up on some Hellmann’s mayo, with our other favorites!
Whenever we have big potlucks in our community I like making a big batch of my chicken pasta salad recipe. It’s a simple pasta salad with chicken that you can easily whip up the night before or even the morning of the get together.
Chicken Pasta Salad Ingredients:
- 1lb rotini pasta
- 2 chicken breasts (I use my oven baked chicken breasts)
- 2 stalks celery
- 4 hard boiled eggs (try our steamed hard boiled eggs method)
- 1/8 cup chopped red onion (can omit if you don’t like onion)
- 1/8 cup chopped parsley
- 3/4-1 cup Hellmann’s Mayo
- 1/2 cup whole milk
- 1 lemon, juiced
- salt + pepper to taste

How to make Chicken Pasta Salad
Place cooked rotini pasta into a large bowl.
Chop up the chicken, celery, onions, parsley, eggs, and then add to the pasta.
Make the mayo dressing, combine the mayo, milk, lemon juice, and salt and pepper.
Pour the dressing mix over the pasta.
Toss to combine and adjust salt and pepper to taste if needed. Store this chicken pasta salad in the fridge until ready to serve, always keep pasta salads with mayo cold.
