The sun is shining, and the temperatures are going higher! That means it’s ice cream time!!! For us, summer means birthday parties, bbq parties, holiday parties and more. Everyone looks forward to grilling and chilling, am I right? The best part of all is always dessert.

We went to our local Walmart to purchase ingredients to make a recipe, plus EDY’S® SLOW CHURNED® Caramel Delight Light Ice Cream and EDY’S® SLOW CHURNED® Vanilla Light Ice Cream! I found both flavors (and others!) right in the freezer section. EDY’S® SLOW CHURNED® Simple Recipes are made with simple ingredients, meaning you know exactly what they are!

 

They are also made with fresh milk and with that do not contain rBST. There’s no artificial flavors, colors or GMOs! It’s an ice cream that I can feel good about serving to my family and friends! So what makes it light? They use wholesome ingredients like non-fat milk! It’s light, but still incredibly creamy! I can’t wait to see my family and friends enjoy. That’s my favorite part of entertaining.. seeing everyone relax, enjoy and just being together.

Ice cream tip: Always have a bowl of hot water ready to dip the scooper into. It makes scooping ice cream much easier!

Both ice creams are so good on their own and when we tried them it inspired us! We wanted to make brownies, but the kiddo requested cookies, so we made brookies! I love the swirls of caramel in the EDY’S® SLOW CHURNED® Caramel Delight Light Ice Cream, so I wanted to add caramel to our brookies too!

The brownies are loaded with chocolate chips and then drizzled with caramel and sea salt. If you don’t want to make them into cookies, you can still place bake them in a square pan.

Easy Brownie Cookie Recipe + Ice Cream

  • 3/4 cup flour
  • 3/4 cup sugar
  • 1/2 cup cocoa
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/3 cup chocolate chips
  • 1/3 cup milk
  • 2 eggs
  • 1/4 cup coconut oil ((or butter))
  • 1/4 cup yogurt
  • 1/2 teaspoon vanilla
  • *Caramels and Sea salt for topping
  1. Preheat oven to 350
  2. Mix all the dry ingredients and then add in the wet. (not caramel and sea salt)
  3. Place into a baking sheet or we like using a muffin top pan.
  4. Bake for 10-12 minutes or until toothpick inserted comes out clean.
  5. Melt caramels and drizzle over cookies then sprinkle with sea salt.
