I know a lot of people love cupcakes and trust me I’m one of them, but there is something about brownies!! I love a good brownie now and then. It has to be soft and chewy though. I don’t want any hockey pucks! Now that Halloween is quickly approaching I figured I’d make some pumpkin brownie treats. No one could turn down a brownie, let alone a cute little pumpkin brownie! The chocolate on this brownie gives it that little bit of crunch. Did I mention there’s a surprise inside? Of course, a Halloween Oreo! Last year I made Oreo cupcakes for Halloween, but this year I wanted to do something different.
Makes 4 Servings1/4 Cup Butter
1/4 Cup Plain 0% Yogurt
1 1/2 Cup Sugar
1/2 Tablespoon Vanilla
2 Eggs
3/4 Cup All Purpose Flour
1/4 Teaspoon Baking Soda
1/2 Cup Cocoa Powder
1/2 Teaspoon Salt
1/3 Cup Bittersweet Chocolate Chips
4 Oreo CookiesPreheat oven to 350.
Combine all ingredients aside from chocolate chips and oreos, mix well.
Once mixed fold in the chocolate chips.
Pour batter into a 9×9 baking pan. Put oreos into the batter.. like this.
Then cover the oreos with the brownie batter.
Bake for about 35 minutes or until tooth pick inserted comes out with minimal crumbs.
Right when it comes out of the oven I like to smash it down – I like to think that this makes it more chewy.
Let cool, then cut into pumpkin shapes
Now for decorating – you’ll need some orange, green, and dark chocolate.
Melt 1/2 cup of orange chocolate and spread over the brownies. Use an offset spatula to make lines.
I then took about 5-6 green wafers and melted them to use as the pumpkin stems.. Cute!
Melt about 1/2 a cup of bittersweet chocolate to give the pumpkins faces, place the melted chocolate into a piping bag. You can use a tip if you’d like.
