Hearty Chicken Stew | One Pot Meal

For me Sunday’s all about putting something in one pot.  The last thing I want to do on my day off is have a sink full of dishes.  Monday it’s back to work so all I want to do is tidy up a bit and then relax.  Whether it’s my Unstuffed Peppers, Sunday Sauce and Meatballs, Chicken Soup, or even a Stew I know we’ll eat and be satisfied.  After all, who doesn’t love comfort food?

Today I figured I’d make a stew.  I love serving my stew over some white rice, or buttered egg noodles.  Right now hubby is on his way home and dinner is simmering away on the stove.  What could be better?  Tonight we’ll watch a movie after dinner, and I’ll be able to relax along with him.  Nothing could be better.

Chicken Stew

Hearty Chicken Stew
4 Servings

4 Boneless Skinless Chicken Breast, chopped
4 Cups Reduced Sodium Chicken Broth
26 oz Chopped Tomatoes or Tomato Sauce (I use Pomi since it’s free of BPA)
1/4 Teaspoon Parsley
1/8 Teaspoon Basil
1/8 Teaspoon Oregano
1/8 Teaspoon Pepper
6 Carrots
4 Yukon Potatoes

In a pot or dutch oven combine the chicken breast, chicken broth, tomatoes, parsley, basil, oregano, and pepper.  Cook for about an hour.  Peel and slice the carrots and add into pot, cook for another 30 minutes.  Peel and chop the potatoes and also add into pot and cook until the potatoes are tender.
