Homemade Home Fries

Breakfast is my favorite meal of the day.  I love potatoes.  I can eat potatoes every and any way they are cooked, almost.  However one thing that freaks me out is when they are fried and baked, as they produce acrylamide.  You can decrease this naturally occurring chemical acrylamide by decreasing cook time.  If you fry your potatoes from start to finish it’s going to take longer plus produce more acrylamide.

Unfortunately potatoes get the worst rep when it comes to acrylamide, BUT they’re not the only food that creates this chemical when heated at high temps.  When heating at high temperatures the sugars form the acrylamide   This means that frying, broiling and baking produce acrylamide.  However when you boil your items first you may decrease acrylamide.  So how do I make my crispy and delicious homemade home fries?  Don’t they need to cook in oil for at least 10 minutes?  Nope!

I like to boil my homemade home fries prior to introducing them to a hot pan with oil.  I only cook them with the oil for a few short minutes to get the crispy skin on the outside.  By cooking the potato first in the boiling water, I significantly reduce the cooking time in the oil.

Why is this so important to me?  That’s because I love potatoes.  I eat them way too often and since they are such a high risk for forming acrylamide, I like to limit when I can.  Do I still eat potatoes fried, sure do!  However I like to limit where I can.

Plus, these home fries are so good you won’t even miss frying them the entire time.  I love the seasonings on top and paired with fresh organic peppers lightly sauteed and eggs.  This breakfast is enough for my daughter and I to split.  She LOVES potatoes just like her mommy!

You can top them with ketchup if you’d like, but we love to enjoy them just as is – on their own.  SO GOOD!

Homemade Home Fries

  • 2 Potatoes (, chopped)
  • coconut oil (, for frying)
  • 1/4 Teaspoon Sweet Paprika
  • Salt and Pepper to taste
  1. Place chopped potatoes into a pan and cover with water, boil potatoes until fork tender.
  2. Once potatoes are fork tender place them on a cloth (or paper towel) and let the moisture steam away for a few minutes. (By doing this you will reduce the water content and ensure a quick and easy crispy crust when they hit the pan.)
  3. Take your chopped potatoes and toss them into a hot pan with a little coconut oil and fry until crispy.
  4. Sprinkle with seasonings and enjoy
