Everyone loves a good egg sandwich recipe, right? From a fried egg on your buttered English muffin, a runny egg on your toast or some hardboiled eggs mashed into fresh egg salad! We had some leftover hardboiled eggs from Easter recipes we made and we thought what better use other than to make a pretty pink egg sandwich recipe. Our egg salad has fresh and healthy ingredients that make it taste bright and delicious. You’ll get a bit of a crunch from the veggies too!

Egg Sandwich Recipe
Love a good egg sandwich recipe? From a fried egg on your buttered English muffin, a runny egg on your toast or some hardboiled eggs mashed into fresh egg salad! Our egg salad has fresh and healthy ingredients that make it taste bright and delicious.
- 4 hardboiled eggs
- 1 tablespoon celery (chopped)
- 1 1/2 tablespoons red onion (chopped)
- 1 tablespoon parsley (chopped)
- 1/2 lemon (juiced)
- 1/8 cup mayo
- salt and pepper to taste
- 4 slices bread
- Place the eggs into a large bowl and use a potato smasher to smash them.
- Add in the remaining ingredients (aside from bread) and mix together.
- Place onto bread, slice into desired shape and enjoy!
