Summer is winding down and we’re finally back from our 2 week vacation. Yes I was gone for a bit! It’s so important for everyone to take a break once in awhile..and it was much needed for me! I turned 30 and Kay turned 3 too! We’ll be sharing a bunch of pictures from our vacation and what we did soon.
We had so much fun going out and about. Now that we’re home it’s back to our normal routine!! I’m always looking for shortcuts in the kitchen and this Mini Meatballs with Blue Cheese and Sweet Balsamic Onion Relish recipe is so quick and easy to make that you can make it in less than 20 minutes! After a long day the last thing I want to do is spend an hour in the kitchen. Even better the clean up is minimal!
First, I’m going to urge and insist you make this Sweet Balsamic Onion Relish recipe from Know Your Produce. We make it every Sunday and use it throughout the week on sandwiches, salads, burgers, and on toast with melty cheese for the toddler. It’s so good you may even make two batches for the week, you have been warned. I’ve used spanish onions, vidalia onions, yellow onions and red. An onion is an onion to me when it comes to the relish!
I actually eat this without the meatballs, but hubby loves his protein. Lately I’m feeling more like a vegetarian thanks to all the local and fresh produce we’re getting at the farmers market. I’m really dreading the winter months coming back and no more local farmer market goodies. We had so much fun in the sun this summer! I’m eager for the fall though!

Mini Meatballs with Blue Cheese and Sweet Balsamic Onion Relish
- 1 lb Ground Beef
- 3 Cloves Garlic Minced
- 1/2 Teaspoon Dried Parsley
- 1/2 Teaspoon Garlic Salt
- 1/2 Teaspoon Black Pepper
- 1 Egg
- 1/4 Cup Milk
- 1/4 1/2 Cup Bread Crumbs ((less or more depending on moisture of mixture))
- Combine all the ingredients and fry in a frying pan with a little oil.
- Cook until desired temperature, we like them medium well and cook for 15 minutes.
- Serve with over salad with sweet balsamic onion Relish, blue cheese, and tomatoes.
