These Minnie Mouse Cupcakes are SO easy to make. I was tempted to make a Minnie Mouse Cake, but ended up making a Minnie Mouse Cupcake Cake Tower and everyone loved it. I saw some Minnie Mouse Cupcake Toppers, but when it comes to kids parties I rather not use plastic pieces and want everything aside from the wrapper edible. This way people can grab a Minnie Mouse Cupcake and just eat and toss. The toys are fun, but they are often just a waste of money to me when I find them broken all over the ground, ha!
Minnie Mouse Cupcakes are so fun and whimsical and sure to make any little girl happy on their birthday. The only thing is my baby couldn’t eat them. Boo! I contemplated for awhile making her a huge 3-tier cake and then decided not to as soon as we got the FPIES diagnosis. I knew she’d have a strawberry and banana cake but I didn’t want to just buy a store bought cake for our guests.
Everyone is a huge fan of my chocolate cake recipe recipe so I just knew I had to make them. I can’t wait for sweet baby to actually try one of my cupcakes. It will be one of the happiest days ever – a celebration has to happen just for that too. I wanted to do a homemade ganache like I usually do but then realized how would I make those adorable Minnie tops!?
I whipped up a simple buttercream frosting and busted out my icing tips. For the Minnie Mouse bows I actually used the grass tip! For the mounds of frosting I just used tip #806 by Wilton and then the ears are mini oreos
Overall the cupcakes were really easy! I made them last minute and so glad I did. While baby wasn’t able to eat them she will be able to one day and enjoy the pictures from her party too!
