I don’t know about you but this has been one expensive summer! Hubby and I love to take vacations during the summer and we ended up spending well over $3k staying local for our first vacation week. Since we had so much fun we did it again! Now we’ve been doing short day trips to the shore since hubby has off, but ouch our bank account! Thanks to Walmart and their rollbacks dinner doesn’t have to cost an arm and a leg. (That’s only when we eat out! ;-)) We actually spent most of the money eating out and obviously hotels. Simple dinners aren’t so easy to do when you’re out on vacation. We save the budget meals for home and splurge while we’re out. Walmart is especially helpful on the 1st and 15th of the month when your waiting for you paycheck! Our summer meals are our absolute favorite. It’s always easy to make low budget meals and budget recipes on the grill too!
Kay has been eating so well lately. She loves her veggies but she’s always asking for mac and cheese and pulled pork! Who am I to deny a child food? If you’re new here and unaware, Kay suffers from a rare food allergy called FPIES. The fact that she can finally eat more than strawberries and bananas like last year is such a blessing! She has well over 20 safe foods now.
Chris on the other hand has been begging for Sloppy Joes. I’m so sick of them though. I didn’t think that would ever be possible, because they are yummy! I headed to Walmart to pick up some Kraft Mac and Cheese (without dyes!), Kraft Barbecue Original, preservative free Kraft Cheese Slices, Portuguese rolls. What’s awesome is that all the Kraft products were on rollback! We saved on our Kraft Mac and Cheese, Kraft Singles, and even Barbecue Sauce. Then we headed to our local store for organic pork which is pretty cheap! If you can’t find it cheaper than $10 I’m sure Walmart has it too. I just have to be careful with Kay and her proteins due to chicken allergy. We love our local butcher. Pulled pork is one of our favorite budget recipes.
The goal – spend less than $20 – and we did it and even had leftovers!
Pulled Pork Mac
Pulled Pork with Mac and Cheese on a Roll!
- 1 lb Pork Shoulder
- 1 bottle BBQ Sauce
- 1 box Macaroni and Cheese
- 4 slices cheddar cheese
- 4 Rolls
- Cook the pork shoulder in a large pot with water for about 2 hours.
- Drain water from pork and leave in about 1 cup. Add in the bbq sauce, shred, and continue to cook for another half hour.
- In a separate pan cook the mac and cheese according to package directions.
- Cut open your rolls and put in the pork, cheese, and top with the macaroni and cheese.
- Enjoy!
