I cannot believe that Thanksgiving is next month, can you? I still can’t believe I just had a baby! Talking about Thanksgiving and baby.. This year I want to take a healthy approach to our Thanksgiving meal. Our traditional meal is loaded with fat, tons of calories, massive amounts of carbs, and of course desserts. Why not try to lighten things up a bit? Typically I use about a pound of butter between all the baking and cooking.. That was until I found Brummel & Brown a spread made by Unilever. I cannot believe the flavor it has in just a teaspoon!
I took a challenge to make my meal healthier for myself.. and most of all my family. We love twice baked potatoes, with lots of fat, spinach with lots of cream and cheese, and turkey smothered in tons of high calorie ingredients. I took my three favorites and swapped out the butter for Brummel & Brown Spread. Did you know that it contains yogurt? If you’re a regular viewer you should know my love for yogurt is never ending!
First I prepared some chicken breasts as I would prepare my turkey. Of course it’s not exactly the same type of poultry, but the ingredients used are.
Rich Garlic Pepper Chicken
Serves 3
3 Chicken Breasts
1 Teaspoon Brummel & Brown Spread
1/2 Teaspoon Garlic Pepper
1/2 Cup Chicken Stock
Few sprinkles of flour
In a large saute pan melt spread and add chicken breasts, sprinkle on garlic pepper. Once browned on one side flip over. Add chicken broth and cover. Cook for 45 minutes on medium fire or until chicken is 160 degrees. Once the chicken is done remove from pan. Add in flour and make a gravy.
Then there is that rich and creamy spinach I had to conquer.. Well I think I did it.
Sauteed Spinach and Cheese
Serves 3
1 Small Onion
3 Garlic Cloves
1 Teaspoon Brummel & Brown Spread
3 Cups Frozen Spinach
1/3 Cup Milk
1 Slice Cheddar Cheese
Chop onion and mince garlic. Add spread into saute pan and add in the garlic and onions. Cook until translucent. Add in the spinach, milk, and cheddar cheese. Heat throughout and serve.
Twice baked potatoes.. Oh how I love you.. However I don’t love what you do to me.. So I can finally enjoy without having to pay for it later!
Twice Baked Potatoes
Serves 3
3 Idaho Potatoes
Kosher Salt
1 Teaspoon Brummel & Brown Spread
1 Teaspoon Cream Cheese
1/4-1/2 Cup Milk
Salt and Pepper to taste
3 Slices of Fresh Mozzarella
Preheat oven to 425. Wash potatoes and prick with fork, roll into kosher salt and wrap in foil. Add the potatoes to the oven and cook for 45 minutes. Once the potatoes are fork tender remove from oven and cut off tops. Gut potatoes and place mash into a pan. Add in spread, cream cheese, milk, salt, and pepper. Mash together and once combined add back to potato skins. Place a piece of mozzarella on top of each and broil for 1-2 minutes.
Now with all those calories I saved I think I’ll be able to enjoy more bread with spread of course, and I’m thinking a little dessert won’t hurt either! One thing I really love that I learned about the spread I chose is that it has no Cholesterol High Cholesterol runs in my family, and I unfortunately have it as well. Switching out products like this will not only help me now, but in the long run. Here’s to hoping my next check up it’s lower!
