Do you notice that school starts before we know it? Like it’s done, and then it feels like a week later then it’s back to school!
I’m always looking for lunch box ideas, and my daughter has gotten pretty picky over the years. While I made a video of one recipe, I’m sharing two lunch ideas for picky eaters!
My daughter would be happy if she could eat two things, tacos, and tuna salad. Tacos are so fun to make and eat. That’s why I came up with the taco lunch kit. It allows my daughter to put on the right amount of what she likes.
In our taco lunch kit, she can have a soft taco or hard taco bites. I’ve learned that if I give her a hard taco shell, it gets pretty messy and breaks on her. Being the smart cookie that she is, she’ll break the taco up into chips. That’s why I figured I might as well just buy the chips and make it easier.
We stick with lean ground chicken instead of beef. By doing this, she can eat it cold or warm if there’s access to a microwave. When you use a ground meat that isn’t so lean it will get a fat film, so that’s how we avoid that by using lean ground chicken.
Pick the fixings your kids like. My daughter likes lettuce, cheese, and salsa for toppings. I add Pace® Chunky Mild Salsa into our taco meat mixture. Not only does it give it flavor and moisture, but it also has all the hand picked veggie chunks that add to the filling. The salsa gives that genuine southwest flavor. It’s perfect for the mixture and perfect for the salsa on the side since it’s nice and chunky. Plus they’ve been making it for 70 years, trusted and loved!
This recipe isn’t just for the lunchbox, no, no, no. You could enjoy this as Taco Tuesday dinner as well! We like to make a large batch and pack a lunch for each of us and then have it for dinner too. Yup, mom, and dad can even pack a lunch like this.

For drinks, we go with V8 Splash®. My daughter drinks nothing but water at home, but her friends all drink juice. V8 Splash® has the first ingredient as water, and I grew up drinking V8® too! I like purchasing the big bottle and small bottles so I can add more water if I like to it. It’s “Deliciously Fruity, Wonderfully Refreshing”. There are tons of different flavors; my daughter loves the Mango Peach and Tropical Blend. It’s safe to say she likes her tropical and ethnic flavors. You’ll also love that it’s packed with a good source of essential antioxidant vitamins A & C!
Your kiddo doesn’t like tacos? Not to worry! Like I mentioned earlier, my daughter can eat her weight in tuna salad. The problem is, tuna is loaded with mercury. You can find lower mercury too, but hey who wants to spend that much? That’s when we opt for Swanson® Premium Chicken. Now, now, don’t knock it until you try it!
I remember my mom cooking with canned chicken, and I thought what are you doing?! Just make chicken! It’s low fat and heart healthy. She told me it’s not the same. She was right! When I make a quick chicken salad, the canned chicken makes it so easy. I fork mashed it with salt, pepper, parsley, and mayo, and a little lemon juice, just like I would make my tuna salad. In less than 5 minutes you have a fresh chicken salad sandwich. Add tomatoes and lettuce, or lettuce only if you kid gags at the sight of tomatoes.

Easy taco lunch kit for back to school. Place this taco kit right into your child’s bento styled lunchbox, and they’ll have a great meal for lunch! Even makes a great family dinner.
- 2 teaspoons olive oil
- 1 lb ground chicken (lean)
- 1/2 cup water
- 2 teaspoons taco seasoning mix
- 3/4 cup Pace® Salsa

In a large skillet heat up the olive oil.
Once the skillet is hot add in the ground chicken and start to mash with a potato masher, trust me it works like a charm!
When the chicken is fully cooked and broken down add in the water, taco seasoning mix, and Pace® Salsa.
Bring to a boil then simmer until mixture thickens.
Serve on your favorite hard or soft tacos with your favorite toppings.
