I’ve tweaked it a bit to our liking and we’ve had it several times over the holiday weeks. It’s simple to make and a delicious meal to eat. I really only made a few tweaks to the original recipe, like removing the tomatoes and citrus peel that hubby would most likely push aside, baby girl too (I make her recipe too using pork!). Actually we’re pretty exited about CHICKEN this month. Tomorrow we’re heading to the Food Allergist for Kay’s FPIES annual check up. This month makes 20 months since she has failed chicken and that means it’s time to RETRIAL! What does that mean? We get to be admitted to the hospital and watch Kay eat chicken. Hopefully she passes the food trial and we can cross chicken off the triggers lists!

Kay is super picky. Kay has FPIES. Those two things make cooking for her extremely difficult. Of course she loves sweets, so there’s no problem there! I’m extremely grateful that she’ll eat regular eggs for breakfast. She especially loves them with a little basil and caramelized onions. My issue is getting other foods into her. I love creating kid-friendly recipes that I know she will devour. Like Potato, Egg and Ham Pancakes! It was a winner as soon as I said pancake. Growing up my mother would make me potato latkes. They’re delicious fried potato pancakes with a little egg, lots of potato, matzo meal and oil for frying. I figured if I made that she’d love it, however I wanted to make it a little better!
I’m thrilled at the opportunity to create a Kid-Approved Recipe for Eggland’s Best. We enjoy their organic eggs and the recipe we created uses a half dozen eggs! She gobbled up her pancakes and asked for more right away. It’s loaded with protein to give your child a great start to their day. By making pancakes loaded with eggs I can ensure Kay is having nutrients that will keep her energized and give her the strength and focus she needs throughout the day.

Empanada Bowl Recipe

Have you ever tried empanadas? I LOVE them, but making them.. not so much. I love all the delicious fillings in an empanada too but always wish it was a little heartier. I’m very picky about olives too. I actually didn’t like olives until recently so the fact that I love black olives now is kind of insane.

This is a dream breakfast for anyone in my opinion. I feel good serving this to my husband since their sausage has NO nitrates, NO nitrites, and NO MSG! Chris actually gets bad migraines from MSG. This is now one of our favorite sausage recipes!
In search of a breakfast for your hungry man? Look no further! My husband leaves the house at 5 or 6am on most days. I can barely open my eyes at that time. I love to make sure he has breakfast and sometimes I treat him and get up early making him a Jalapeno Sausage Breakfast Sandwich. This is not your typical breakfast sandwich, it’s more.. so much more! It’s not round, there’s no patty, but instead a link of delicious and REAL meat sausage, eggs, and even hashbrowns. I purchased Hillshire Farm’s American Craft Sausage links from our local Stop and Shop. They’re hand crafted with 100% pork! (Try all their flavors Smoky Bourbon, Garlic Onion, & Jalapeño Cheddar) Chris ate all our sausages and I actually planned to make my favorite macaroni and cheese (they’d even be delicious chopped up into the mac and cheese!!) sauce with chopped jalapenos and red peppers in them to dip the sausages in. How good would that be? YUM! Or you could even drizzle that ON TOP of this breakfast sandwich. WOW! I’m blowing my own mind here guys. Sorry haven’t eaten dinner yet
