I love saving time in the kitchen, whether it’s the prep or the clean up.  Lately Chris has been taking lunch to work since we realized he was spending well over $200 a month eating a work.  I love to go to the wholesale stores and buy a huge thing of chicken and cooking it all one day and freezing into individual packages for him to take.  I realized in doing this how easy it is to prep ahead for dinners too!  I simply double the portions and have enough for us for dinner now.  It’s perfect for when I’m just not in the mood to cook and we’d typically order out.  I had ordering out, it’s sooo expensive and not very healthy.

Hot and fresh fried wings are a staple for any super bowl or sports party. I recently went to our local Super Walmart Deli to do a test run and see how we could compare their fresh and ready deli wings from Tyson to homemade.  In addition to the Bone-in Hot Wings I purchased General Tso’s Boneless Wings for the guys and gals!  I have a great recipe to share using them!  For dip ins we picked up some Kraft Ranch and Kraft Creamy Italian Dressing.  The prepared wings will save so much time, and they’re still fresh wings!   You can purchase in a Pick 3 Bucket, Plated, Meal, or by the pound!

Making a meal for our family was almost impossible last year due to Kay’s FPIES food allergy.  This year I can actually make RECIPES from websites.  What’s even better is because she can eat more foods I know how to substitute ingredients.  Tonight I made Spicy Chicken Lasagna Roll-Ups from the Kraft website.  While Kay can’t have chicken, she can have pork.  So I made it with pork instead, and it’s so good!

Have you ever tried empanadas?  I LOVE them, but making them.. not so much.  I love all the delicious fillings in an empanada too but always wish it was a little heartier.  I’m very picky about olives too.  I actually didn’t like olives until recently so the fact that I love black olives now is kind of insane.

Grilled Chicken BLT Burgers

This burger.. it’s incredible.  Want to know my biggest pet peeve about burgers?  When they taste like meatloaf.  I hate a burger with added things like breadcrumbs, eggs, and milk.. Seriously.. meatloaf is good but if you’re going to call it a burger.. don’t.   Whenever I make a ground beef burger or even a chicken burger I just lightly season them.  For beef I do simple salt and pepper, but I get a little more spicy with the chicken.  The chicken doesn’t have all that fat to flavor so I love to add things like bacon and avocado to really make it a big flavor punch!
